Chili Chicken Casserole

Introduction

This is a great way to use leftover chicken. I thought the jalapeno might make it too hot/spicy but it gave it a mild, spicy hot flavor. For a complete meal serve with a dinner salad. Ingredients

    Egg Noodles, enriched, 3 cup cooked
    Boneless/Skinless Chicken Breasts, 12 oz, cooked & diced
    Cream of Mushroom Soup, 1 can (10.75 oz)
    Milk, 2%, .5 cup
    Onions, raw, .5 medium (2-1/2" dia)
    Garlic, 1 tsp
    Jalapeno pepper raw (1 pepper)., 1 serving
    Canola Oil, 1 tbsp
    Bread Crumbs, 1 cup

Directions

Heat the oil in a small pan. Dice the onions, garlic, & pepper. Add them to the pan and saute until soft.

Stir the soup & milk together.

Spray a 2 quart baking dish with PAM. Add all ingredients. Cover with bread crumbs.

Cook for 30 minutes at 375 degrees.

Serves 5
