Becky's 'On Hand' Turkey and Veggie Soup

Introduction

Had some freezer and refrigerator foods needing to be used up and added some items from the pantry. This actual turned out to be a delicious soup. My husband, who is not a big soup fan ate 2 helpings! It is mildly spicy but can be easily spiced up by adding additional hot pepper sauce. Ingredients

    8 oz lean ground turkey
    1/4 medium red onion, chopped
    1 large celery stalk, chopped
    2 medium potatoes, peeled and cut into small chunks
    1 medium tomato, peeled and coarsely chopped
    1/2 cup frozen diced peas and carrots
    3/4 cup frozen baby lima beans
    4 oz of frozen sugar snap peas
    14 oz can of Swanson 100% fat free, 33% less sodium chicken broth
    8 oz (or 1 cup) Tomato Sauce
    1/2 cup canned yellow whole kernal corn (DelMonte)
    1/4 cup water chestnut slices, chopped
    1/2 cup light red kidney beans
    1/2 tsp garlic powder
    1/2 tsp black pepper
    1/4 tsp crushed red pepper
    1/4 tsp oregano
    1/4 tsp ( 2 dashes) hot pepper (tobasco) sauce, or to taste

Directions

Brown turkey, onions, and celery together. Add potatoes and frozen vegetables (except sugar snap peas), broth, tomato sauce, and seasonings. Bring to a boil and then simmer until potatoes are just tender but not mushy. Add the sugar snap peas, water chestnuts, corn and kidney beans and continue to simmer until last added items are heated through. Makes approximately 7, 1 cup servings
