Amish Country Potato Soup

Introduction

This is a wonderful Fall or Winter cream soup with not that many calories per serving. This is a wonderful Fall or Winter cream soup with not that many calories per serving.
Number of Servings: 3

Ingredients

    1 1/2 cups diced potatoes
    1/4 cup sliced carrots
    1/4 cup chopped onion
    3/4 cup water
    1 chicken bouillon cube
    1 cup fat free milk
    1/2 cup fat free sour cream
    1 Tbsp. flour
    1/2 tsp. chopped chives


Directions

Combine potatoes, carrots, onions, water, and bouillon in a saucepan. Cover and cook until veggies are tender, but not mushy. Add 1/2 cup milk; heat. Mix sour cream, flour, chives and remaining milk with whisk. Stir mixture into soup base, gradually. Cook over low heat, stirring constantly, until thickened. Add cheese and bacon bits for extra flavor.

Makes about 3 ~ 1 cup servings
