Impromptu tomato sauce

Introduction

I am not a huge fan of pasta sauce (something about cooked tomatoes) so I hardly ever keep any in the house (unless it's for my husband). I needed to make some sort of sauce or topping for some italian sausage, and out came this recipe, which turned out pretty good! Number of Servings: 2

Ingredients

    1/2 pint grape tomatoes, cut in half
    1/2 cup onion, chopped
    1/2 Tbsp extra-virgin olive oil
    1/2 Tbsp unsalted butter
    1/2 tsp kosher salt
    1/4 tsp ground black pepper
    1 tsp Penzeys pasta sprinkle (or any italian seasoning blend)
    1/4 tsp garlic powder
    1/2 cup low sodium chicken broth

Directions

Add olive oil and butter into a saucepan over medium heat. Add onions, salt, pepper, and garlic powder and cook until turning soft, about 5 minutes. Add tomatoes and italian seasoning. Cook another 5 minutes until tomatoes become softer and release some juice. Mash with potato masher if desired to make tomato pieces smaller. Add chicken broth and simmer another 5 minutes to marry all flavors.
