Apple Cinnamon Steel Cut Oatmeal

Introduction

I make this ahead and store in single serving containers in the fridge, then pop into the microwave for a quick and healthy breakfast. I make this ahead and store in single serving containers in the fridge, then pop into the microwave for a quick and healthy breakfast.
Number of Servings: 4

Ingredients

    4 cups water
    1 cup steel cut oats
    2 large fresh apples, cored and diced (I cook with peel on)
    1 tsp cinnamon
    1/8 tsp freshly ground nutmeg

Directions

Place 4 cups water in a medium sauce pan and bring to boil. Stir in oats, diced apple, cinnamon and nutmeg. Return to boil, then reduce heat to low and simmer, uncovered for 30 minutes, stirring occassionally. Let sit for 5 minutes before serving. Makes 4 servings.

I serve with fat free vanilla yogurt. You can also sweeten to taste with brown sugar or maple syrup.
