Shrimp Creole

Introduction

This is a lower calorie, lower sodium, higher fiber version of the standard shrimp creole that is very simple to make. This is a lower calorie, lower sodium, higher fiber version of the standard shrimp creole that is very simple to make.
Number of Servings: 10

Ingredients

    2 C Brown Rice - cooked
    5 stalks celery
    1 onion
    5 carrots or 1 c shredded
    1 sweet pepper - yellow, red, or orange
    1 C fresh mushrooms
    1 C zucchini
    2 T olive oil - extra virgin
    1 Can Pureed Tomatoes or Diced tomatoes (29 oz) (low sodium)
    1 T Chili Powder
    1 pound raw shrimp (may substitute chicken breast)

Directions

Cook brown rice until done.

While rice is cooking, sautee all vegetables in olive oil. Add tomatoes, chili powder and shrimp or chicken (or both) and simmer. Serve over brown rice.

Serving size: 1/2 c to 1 c brown rice with 1/2 c to 1 c sauce
