Garlic white bean soup with kale

Introduction

Ingredients

    15 cloves garlic
    4 cups vegetable broth
    1/4 tsp thyme
    2 cups white beans, drained and rinsed
    2 Tbsp olive oil
    5 cups kale, washed, chopped (reduces to about 3 cups steamed)

Directions

Peel and smash garlic, then boil in broth and thyme for about 40 minutes.

Meanwhile, puree beans and oil in blender until smooth, adding small amounts of water to ease blending. When garlic is done, add all the pot contents to beans, then puree again until garlic is completely incorporated. This could also be done by adding beans to pot and using a hand blender. Add salt and pepper to taste.

Steam kale in a basket steamer for 4 minutes, until bright green and slightly tender. Do not over steam!

In bowls, distribute kale, then top with ladles of bean broth.
