Sweet Potato Casserole

Introduction

This is my mother's recipe that we do for all holidays. Very rich, a little dab will do you. This is my mother's recipe that we do for all holidays. Very rich, a little dab will do you.
Number of Servings: 12

Ingredients

    3 cups Sweet potato, cooked, baked in skin, or use canned
    2 large Eggs, fresh
    1 tsp Vanilla Extract
    1/3 cup Milk
    1 cup Granulated Sugar
    1 stick Butter, unsalted

    Topping:
    1 cup Brown Sugar, packed
    1/3 cup Flour
    1/3 cup Butter, unsalted
    1 cup, Pecans, chopped

Directions

Mix all together [beat well to fluff] and pour into a buttered or sprayed baking dish. Mix topping to crumb stage, sprinkle over the top. Sprinkle with chopped pecans. Bake at 350 for 30 minutes.

Makes 12 servings 1/4 cup each.

You can use Egg Beaters, fat free milk, Smart Balance light, etc to make it lighter.
