Strawberry Spinach Salad

Strawberry Spinach Salad

Number of Servings: 8

Ingredients

    2 TBSP sesame seeds
    1 TBSP Poppy seeds
    1/2 C sugar substitute
    1/4 C Olive oil
    1/4 C distilled white vinegar
    1/4 teaspoon paprika
    1/2 tsp Worcesestershire Sauce
    1 TBSP minced onion
    10 oz fresh spinach
    1 quart strawberries, sliced
    1/4 C almonds blanched and slivered

Directions

In a medium glass or plastic bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcesesershire sauce and onion.

Cover and chill for 1 hour

in a large bowl, combine the spinach, strawberries, and almonds.

pour dressing over salad and toss

refigerate 10 to 15 minutes before serving

**As a diabetic, I use Splenda - you can, however, use Sugar but the carb count will go up**

    I use a non-fat raspberry vinagrette dressing for a much lower fat count and sometime swap out almonds for pine nuts or I crumble in a low-fat feta cheese. Yum! - 4/16/08

    I cut down the olive oil to 2 T and use balsamic vinegar. I also thinly slice red onion rings instead of the chopped onion. Some fat is good fat. - 4/16/08

    Love this salad. I used bottled fat free poppy seed dressing for ease of use. It makes a great salad. Sometimes, I add chicken or other fruit, or even salmon, but it is delicious - 4/16/08

    I make this but use a dressing made of 2 tbsp balsamic vinegar, 1 tbsp honey, 1 tsp old fashioned/whole grain mustard. Yummy! - 4/16/08

    really good, I have made this other times and am going to make it tonight to use some strawberries I have on hand. I make it for one and use a Lite Raspberry vinegaigrette dressing, ( Kens Steak house brand) Very good. - 4/16/08

    I have made this recipe many times,I usually use low cal poppy seed dressing , or a low cal raspberry vinegarette, but I add in CANDIED almonds, and some cubed Havarti cheese. If I don't have fresh strawberries, I use canned mandarin oranges...YUMMY! - 4/16/08

    I usually have this at my faveorite Brazillian Restaurant. They add grilled chicken, fresh pineapples, tomatoes, and grapes and call it Chicken & Fruit Salad. LOVE IT!!! - 4/16/08

    I have a very similar recipe. I use 1 oz. cold pressed flaxseed oil w/no vinegar or sugar. I also add small can of drained mandarin oranges. I don't use the other seasonings or onions. It wouldn't be fair to rate this receipe as is w/o trying it. The spinich & fruit flavor is a great combo. - 6/26/07

    I have a very similar recipe that calls for feta cheese/toasted pecans. The dressing is low fat as it calls for poppy seeds, orange juice, raspberry vinegarette, sweetner (Stevia/Splenda or Honey). For added flavor, I sometimes spay the pecans with cooking spray and dust pecans with a tsp of sugar - 6/26/07

    This sounds very similar to a salad a local resturant has on thier menu it sounds like the same dressing also I love it....Very satisfying I use strawberries and other fruit apples and cranberries on my salad regularly makes for an interesting change day to day... - 6/26/07

  • Fantastic. I had a previous favorite spinach/bacon/water chestnut salad & dressing but this is lighter, more summery tasting. I extended the yummy dressing with the same amount of re-hydrated chia seed, in place of other sweeteners I used Natures Way Liquid Whole Leaf Stevia. A "keeper" recipe! - 3/9/10

    To all those getting bent out of shape over the olive oil content: 1/4 cup = 4 Tbsp. total, or 1and1/2 tsps. per serving at the listed number of servings, and that is easy enough to cut if you want to. - 4/16/08

    This sounds delicious, but I would rather lower the amount of oil and add a bit of lemon juice instead, skip the worcerster sauce and the sugar substitute to keep it natural and "clean". - 4/16/08

    So disappointed in the recommendation on Splenda. There is no artificial sweetner that is worse for you. Use Stevia or some other natural sweetener. - 6/26/07

    I will probably make this sometime soon. It is easy and looks delicious. As for the fat amount per serving, I think it is pretty right on. I looked up the amount of fat in both fatty ingredients and they are high. You could use less oil and a different nut to save on fat. - 6/26/07

    Check the fat gram information on this one; I don't think 10.1 grams is accurate for the .032 cup olive oil plus the .032 cup slivered almonds per serving. - 6/26/07
