I added veggies and substituted lean turkey sausage to an old Bisquik recipe. Choose the veggies you like or have on hand. Leave out the sausage for a vegetarian dish. Calories could be reduced with the new lower-fat Bisquik (but that's not what my hubby bought). I fix for breakfast or dinner -- add fruit and/or salad. Ingredients:
Egg, fresh, 4 large
Milk, nonfat, 2 cup
Bisquik, 1 cup
*Cheese, Mozarella, Low Moist/Part Skim (Lucerne), 6 oz
*Jennie-O Turkey breakfast sausage link, 12 links
Broccoli, fresh, 1 cup, chopped
Cauliflower, raw, 1 cup
Peppers , .25 C chopped (I used mix of red, yellow, orange)
Onions, raw, .25 cup, chopped
Zucchini, 1 cup, diced
Directions
Cut sausage into bite-size pieces, and brown with onion and peppers. Add other veggies and saute about 5 minutes. Pour this mixture into greased casserole dish. Sprinkle with grated cheese. Beat eggs, milk and bisquik together and pour over cheese, sausage & veggies.
Bake at 400 degrees for 45 min (at high altitude - fewer for lower altitudes) until knife stuck in center comes out clean.
