Introduction

Ingredients

    Canned Chipotle Peppers in Adobo Sauce, 2 tbsp
    Green Chili Peppers, canned, .25 cup
    Beer - Corona Extra, 12 oz
    patron silver tequila, 2 oz
    Salt, 1 tsp
    Pepper, 1/2 tbs
    Onions, raw, 1 large
    Garlic, 3 cloves
    Oregano, ground, 1 tbsp
    Pork Tenderloin, 32 oz
    365 Organic Diced Tomatoes, 2 cup
    Copped carrots, 2 cups
    Campbell's low sodium chicken broth, 3 cup

Directions

Cube pork and put into a ziploc bag with tequila and chipoltle peppers in adobo sauce to marinate for at least one hour. Spray a large pot/ dutch oven with cooking spray and heat, add pork and brown meat thoroughly. If you love spice keep peppers with pork, for milder taste discard peppers with remaining marinade.
Remove pork from pan and add chopped onion and chopped garlic. Cook until onion is sof and slightly brown. Add beer to pot and stir to get up browned bits.. Season pork with salt and black pepper and add pork back to pot. Add All other remaining ingredients and bring to a boil. Reduce heat, cover and simmer 2-3 hours. You can also bring all ingredients to a boil and transfer to a slow cooker to on low for 8-10 hours.
Serve with cornbread and a spinach salad (with mandarin oranges or strawberries to compliment the zing of the stew.)
