Introductionmashed potatoes with parmesan cheese mashed potatoes with parmesan cheese
5 cups pototoes, diced
1/2 c skim milk or lowfat milk
1/2 c buttermilk or 1/2 c skim milk with 1 tsp lemon juice
1 tbsp smart balance
3 tbsp parmesan cheese
Boil the pototoes until done about 10 minutes.
While the pototoes are boiling warm milk in a pan. Add milk and cheese to the mashed pototoes and whip. Add smart balance to top of pototoes. Makes 8 servings of 3/4 cup.
