Mini Meatball Soup

Number of Servings: 12

Ingredients

    1 cup chopped carrots
    1 cup chopped celery
    1 cup chopped onion
    6 cups chicken broth
    4 cups water
    1 lb. extra lean ground chicken breast
    1 egg
    1/2 cup parm. cheese
    1/2 cup seasoned bread crumbs
    2 t. minced garlic
    1 1/2 cups small pasta
    4 cups spinach

Directions

Saute' carrots, celery and onion in pot for about 5 minutes. Add broth and bring to a boil.

Mix chicken breast, parm. cheese, bread crumbs, egg and garlic and make into mini meatballs. Turn pot to a simmer and add meatballs. Cook for 10 minutes, then add pasta. Cook for additional 12 minutes. Add spinach lastly until wilted...serve.
