Marianne's Black Bean Soup

Introduction

Number of Servings: 6

Ingredients

    1 lb. of Black Beans (soaked overnight)
    1 large yellow onion, chopped
    6 cloves of garlic, minced
    6 cups of Trader Joe's Organic Chicken Broth
    1 Bay Leaf, crumbled
    1 Tbsp Cayenne pepper
    1 Tsp of chili powder or flakes
    1 Tsp of Cumin seed or ground
    4 oz cooked lean pork top loin, cut into small pieces
    3 Tbsp of Olive Oil
    Salt & pepper to taste

Directions

Makes 6 1 cup servings -
Soak and rinse black beans overnight. Add oil to dutch oven and heat. Add onion, garlic and saute til soft. Add chopped pork until done. Add beans, chicken broth and all spices. Bring to low boil and cook over 2 1/2 hours, until beans are soft. Use blender or potato masher to squish beans. Serve over rice or not, with plain yogurt and green onion garnish.
