Beef Burgundy

Ingredients

    1 lb sirloin steak
    1/2 large onion, sliced
    1c mushrooms (optional)
    2T flour
    1/2tsp dry mustard
    1/2tsp sale
    1/2tsp fresh ground pepper
    1T olive oil
    1Tbutter
    1c red wine
    1/2c beef broth(non-fat)
    1 bay leaf
    1/2tsp oregano


Directions

Slice beef into bite sized strips. Mix flour, mustard, salt and pepper in a bag. Shake beef with flour until well coated. In a nonstick saute pan, melt butter with olive oil. Add beef, onions and mushrooms and saute until meat is browned and onions are translucent. Add wine, broth and spices to pan, cover and simmer for at least 45 minutes, until meat is very tender.
Serve over whole wheat pasta.
Serves 4.
