Introduction

This is a good alternative to low fat, low carb and low sodium spaghetti sauce. This is a good alternative to low fat, low carb and low sodium spaghetti sauce.
Number of Servings: 6

Ingredients

    Celery, raw, 1 stalk, large (11"-12" long)
    Carrots, raw, .5 cup, grated
    Zucchini, .75 cup, sliced
    Broccoli, fresh, 0.5 cup, chopped or diced
    Cauliflower, raw, 1 cup
    Mushrooms, canned, .75 cup
    Spinach, fresh, 2 cup
    fat free chicken broth, 2 cup
    Tomato Paste, 0.25 cup
    Olive oil spray
    Garlic, 3 cloves

Directions

shred all veggies in a food processor. spray a 12 inch deep pan with the olive oil spray and saute all veggies on medium to high, except the garlic, until very soft. add the garlic just before adding the tomato paste and the chicken broth. season with salt, pepper and any herbs you like, cover and bring to a boil untill the broth is absorbed. put everything in the blender and add some water to get to the preferred consistency. this is a good alternative to low fat, low carb and low sodium spaghetti sauce. enjoy!!!!!
makes 6-1 cup servings.
