Introduction

This is a hungry girl 200 under 200 recipe originaly, but i changed some of the ingredients, i just didn't have the needed ones in the house at the time. Number of Servings: 6

Ingredients

    *Whole Wheat Flour, 1 cup
    Blueberries, fresh, 1 cup
    *Skim Milk, .5 cup
    Reduced Calorie Pancake Syrup, .25 cup
    **Flax Seed Meal (ground flax), 1 tbsp
    *Splenda No Calorie Sweetener, 12 tsp
    Brown Sugar, .1875 cup, unpacked (3 tbsp)
    i can't believe it's not butter(made with olive oil), 2 tbsp
    mott's no sugar added country berry, 2 tbsp
    Baking Powder, 1.5 tsp
    Vanilla Extract, .5 tsp
    Salt, .25 tsp
    Water, tap, 1.5 fl oz

Directions

preheat oven to 400 degrees. mix flax meal with 3 tbsp of water and add the milk, syrup, butter, apple sauce and vanila extract and whisk with an electric mixer until blended( the butter will be lumpy, but that's ok). in a separate bowl combine all dry ingredients and add to wet ingredients and whisk untill completely blended, then fold blueberries. line a 6-cup muffin pan with baking liners and/or spray with nonstick spray, evenly distribute batter among the six cups. bake for about 22 minutes or until a toothpick inserted into the center of a muffin comes out clean. enjoy!!!!!
