Chicken with Warm Bean Salsa

    Chicken Breast, no skin, 12 ounces(4 -30 oz pieces) cut 1/4 inch thick
    Cheddar or Colby Cheese, Low Fat,3/4 cup, shredded
    Stewed Tomatoes,mexican style 14 1/2 oz
    Beans, black, 15oz can drained
    Cilantro, fresh, 2 tbsp +
    oregano,dried, 1/2 tsp
    Salt, 1/4 tsp
    Pepper, black, 1/8 tsp


Spray a large nonstick skillet with cooking spray and heat .suate chicken until lightly browned. about 3 minutes then spinkle organo,salt and pepper. Turn over and saute until chicken is cooked throught about 3 minutes longer. Sprinkle with all but 1 tablespoon of cheese

Meanwhile in a small saucepan, bring tomatoes and beans to a boil .
serve chicken , topped with black bean salsa and reamininf cheese and cillantro
