Cowboy Stew

Introduction

A one-pot chili based dish loaded with vegetables. This is a low fat version of the original. A one-pot chili based dish loaded with vegetables. This is a low fat version of the original.

Ingredients

    Vegetables can all be canned; no need to measure
    Ground turkey sausage is also very tasty in this dish!

Directions

Spray dutch oven with cooking spray.
Brown Gr. turkey until done (do not drain)
While turkey cooks, chop potato into bite size pieces
Dice onion
Add chili powder and cumin to turkey, stir to combine
Add remaining ingredients, stir well
Cook for 30 minutes or until potatoes are tender
(for thicker stew, add small amount of tomato paste, for thinner stew, add water to desired consistency)
