Introduction

I was trying to sneak veggies into the favorite instant mashed potatoes, instead I created a great veggie dish! (Leave out the margarine to reduce the fat and sodium...) I was trying to sneak veggies into the favorite instant mashed potatoes, instead I created a great veggie dish! (Leave out the margarine to reduce the fat and sodium...)
Number of Servings: 4

Ingredients

    1 package Idahoan Four Cheese Mashed Potatoes
    1 cup Broccoli, fresh, chopped small
    1 cup Cauliflower, raw, chopped small
    1 cup Carrots, raw, chopped small
    2 tbsp Margarine
    2 cups water

Directions

Chop all the vegetables into very small pieces, about the size of a pencil eraser. Combine with the 2 cups water in a saucepan. Cover and bring to a boil, cook until vegetables are tender. DO NOT discard the water. Add the instant potatoes to the pan, stirring well. Once the potatoes are all mixed in, add the margarine (or butter) if desired. Note: there is plenty of flavor without the margarine, my boyfriend just likes the texture better with it added.

Makes approximately 3.5 to 4 cups, 4 servings.
