Ingredients

Cooked Brown Rice, (can be cooked the night before) 1 cup
Soy Milk, 6 fl oz (can be dairy, soy or almond)
Water, 4 fl oz
Almonds, .25 cup, roughly chopped
Apricots, dried, .25 cup, halves, roughly chopped
Raisins, .25 cup, packed (sultanas work best)
Cinnamon, ground, .25 tsp
Directions
Add all of the ingredients into a saucepan and bring gently to a slow simmer. Continue to cook over a very low heat, without a lid, until thick and creamy. This should take approx. 10 minutes. The mixture can stick and burn easily, so stir frequently. If you feel the mixture is too thick, just add more liquid. SERVES 2.
