Crust Free Protien Pumpkin Pie Cupcakes 100 calorie

Introduction

Easily portioned into 12 cupcake tins. No need to use paper. Easily portioned into 12 cupcake tins. No need to use paper.
Number of Servings: 12

Ingredients

    4 egg whites and 1 whole egg blended
    15 oz can pure pumpkin (2 cups fresh)
    7 packetts of Truvia
    1/3 c. packed brown sugar
    1 tbsp salt
    3 tbsp Vanilla
    2 tbsp cinnamon, cloves, ginger, nutmeg (to taste)
    3 tbsp whole ground whole oats
    1 c. Cottage Cheese(blended smooth) OR 1 Block of Silken Tofu (soft)
    4 scoops whey protien (body fortress)

Directions

1. Mix all dry ingredients, Mix all wet ingredients in a large bowl. Then add dry ingredients to wet ingredients and use beaters to mix for 3 minuts or until well mixed
3. Spray a 9-inch pan with cooking spray.
Pour batter into cupcake pan (about 1/2 cup in each).
4. Bake at 350° for 45-55 minutes
or until knife inserted 1 inch from the center
comes out clean.

**Keep pie chilled after cooking.
