Number of Servings: 10

Ingredients

    1 1/2 pounds sirloin cubed
    4 cups of diced celery
    2 sweet red peppers diced
    2 sweet italian peppers diced
    3 medium onions diced
    6 cloves of garlic minced
    1 28 oz can crushed tomatoes
    1 can rotel
    1 can swanson beef broth
    1 pound bag dried lentils
    2 cups of apple juice
    2 cans goya red kidney beans
    1 TBS cinnamon
    1 tsp allspice
    4 TBS chili powder
    2 TBS cumin
    2 TBS cilantro
    1 tsp thyme
    2 tsp oregano
    1 tsp paprika
    1/2 tsp cayenne pepper
    1/2 tsp chipolte

Directions

Brown beef in big dutch oven, add next 5 ingredients until tender, add all the rest of the ingredients, cover and put in oven at 300 for 3 hours or until lentils appeared to be cooked. Add more liquid if need be.
