Fresh Apple Cake

    1/2 cup granulated sugar
    1/2 cup brown sugar, packed
    1 cup buttermilk
    1/2 cup unsweetened applesauce
    2 teaspoons vanilla
    2 large eggs
    1 1/2 cups all-purpose flour
    1 1/2 cups whole wheat flour
    1 tsp baking soda
    1 tbl ground cinnamon
    1/2 tsp salt
    3 medium unpeeled apples, finely chopped
    1 cup 10X confectioner's sugar


Heat oven to 350 degrees. Spray bottom only of cake pan (13X9) with cooking spray.

In large bowl, beat sugars, buttermilk, applesauce, vanilla and eggs with electric mixer on low speed 20-30 seconds or until blended. Add all remaining ingredients (except apples and 10X sugar); beat on low speed about 1 minute or until blended. Stir in apples, spread batter in pan.

Bake 40-45 minutes or until toothpick inserted in center comes out clean. Cool in pan on baking back for at least 1 hour. Sprinkle confectioner's sugar over top after cake is completely cooled.

NOTE: You could also add 1 cup chopped walnuts, but adjust recipe if you add them.
