Ground Chicken Breast and Spinach Meatballs

Introduction

Very healthy and delicious. Especially good with homemade tomato sauce and whole wheat pasta. One serving fills you up! Very healthy and delicious. Especially good with homemade tomato sauce and whole wheat pasta. One serving fills you up!
Number of Servings: 6

Ingredients

    1 pound ground chicken breast
    1 package frozen spinach, thawed and dried
    1 large egg
    parmesan cheese
    bread crumbs
    fiber one cereal
    onion
    garlic
    milk

Directions

First chop onion and garlic and saute with olive oil cooking spray until tender, let cool. Place chicken breast, spinach, 1/4 parm. cheese, 1/4 bread crumbs, 1/4 cup ground fiber one cereal, 3 Tbls. skim milk, onion and garlic in large bowl. Mix together, making sure to incorporate all of the spinach. Heat large skillet and spray with cooking spray. Shape mixture in 18 golf ball size meatballs, and cook in pan. One serving is 3 meatballs.

  • Sounds great but what is the measurements for parm cheese, breads crumbs etc? Is it 1/4 cup? - 3/17/10

    Hi, Yes the measurements for the parm. cheese and breadcrumbs are 1/4 cup (eyeball more or less, depending on the taste you want). It explains in the directions section.. Enjoy

  • My 8 year old son helped me make these. HE LOVED them and so did the rest of our family! Its a great way to get your kids to eat spinach! I omitted the milk and made a double batch/froze half for next time. Also I used shredded wheat instead of fiber one. Great recipe! thanks for sharing! - 2/18/10
