Mom's Simple Chili

Introduction

A simple chili recipe my mom always made on rainy fall days. It is just the right level of spicy and has a little sauce to dip corn bread in without being watery. Number of Servings: 5

Ingredients

    1 Can Campbell's Condensed Tomato Soup
    0.5 Can water
    1 Can Dark Red Kidney Beans (drained)
    1 Can Light Red Kidney Beans (drained)
    1 12oz Can Del Monte Diced Tomatoes in juice
    1 lb lean ground beef
    1 medium onion chopped
    0.5 Cup chopped green pepper (or as you like)
    3 tbsp Chili Powder (or as you like)

Directions

To a large pot add canned tomato soup and 0.5 can water- stir to incorporate.
Add to that drained canned Kidney beans (mixing light and dark looks nice but you can use both cans the same).
Add the diced tomatoes along with juice.
You will want this to boil gently for 20 minutes so get the heat turned on now.
Then add 3 Tbsp Chili Powder (more or less to taste) -stir to incorporate

Chop onion and bell pepper (I like mine fine) and add to a hot skillet with 1 lb lean ground beef.
Brown meat on high and drain.

Add meat and onion/pepper mixture to pot with rest of ingredients and let gently boil for 30 minutes, stirring occasionally.

Makes 5 generous servings
