Banana Walnut Pancakes

Introduction

Bananas and walnuts optional of course. They are included in the nutritional info. My ingrdient list was inhibited by what I had on hand. For instance, you can easily cut more calories by using nonfat milk instead of 2%, egg whites instead of the entire egg, etc. Bananas and walnuts optional of course. Ingredients

    1.5 cups whole wheat flour
    3.5 tsp baking powder
    1/4 tsp salt
    1 Tbsp of Splenda
    1 and 1/3 cups milk (only had 2% when I created recipe)
    1 egg
    3 Tbsp smart balance butter, melted
    1 tsp vanilla extract
    1/2 cup chopped walnuts
    1 medium sized banana

Directions

1) In large bowl, sift together flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg, and melted butter. Add the banana and mix until smooth.

2) Chop the walnuts and add them to the mixture.

3) Heat a lightly sprayed griddle over med high heat. Pour/scoop the batter into the griddle, forming approx 4-inch sized pancakes. Brown on both sides and serve hot. Makes approximately 18 pancakes. One serving is 2 pancakes.
