High Protein Pumpkin Pancakes

Number of Servings: 1

Ingredients

    1/2 c. old-fashioned oatmeal
    1/4 c. low fat (or fat free) cottage cheese
    4 egg whites
    1 tsp. vanilla extract
    1 tsp.pumpkin pie spice (OR add 1/2 tsp. cinnamon and 1/2 tsp. nutmeg)
    1/2 c. pure pumpkin puree
    1 t Splenda (or sweetener of choice)

Directions

DIRECTIONS:
1. Preheat griddle.
2. Process all ingredients in a blender until smooth.
3. Cook 1/4-1/2 c. at a time over medium heat, flipping half way though (wait until bubbles show through on the uncooked side), until lightly browned and cooked though.
