Salmon Quiche

Introduction

Ingredients

    Crust:
    1 Cup Whole Wheat Flour
    2/3 C reduced fat Sharp Cheddar Cheese
    1/4 C chopped slivered almonds
    1/4 tsp paprika
    (optional) 1/2 tsp salt
    3 Tbsp canola oil
    3 Tbsp water

    Filling:
    4-3oz no drain pouches Chicken of the Sea Alaskan Pink Salmon (12oz drained total)
    1 C fat free sour cream
    1 cup egg substitute
    1/4 cup fat free mayo
    1/2 C reduced fat shredded sharp cheddar
    1/4 tsp hot sauce (tobasco)
    1/4 tsp dried dill weed

Directions

Preheat oven to 400 degrees.
Mix first 5 crust ingredients (flour, 2/3 C cheese, almonds, paprika & salt (optional) in a bowl. Add oil and water and cut in with a fork. Reserve 1/4 cup of crust mixture for top. Press remaining crust mix into bottom and sides of 9" pie plate.
Bake crust for 10 minutes. Remove from oven and reduce heat to 325 degrees.

For filling: Whisk egg substitute, sour cream, mayo, hot sauce & dill weed in large bowl. Fold in salmon and 1/2 cup cheese. Pour into baked crust. Crumble 1/4 C reserved crust mixture over top. Bake in 325 degree oven for 45 minutes.
Can be served warm or cold. 8 servings

I substituted fat free ingredients where I could. Can use regular or reduced fat sour cream and mayo but calories/fat will go up. The crust was originally 6 Tbsp oil. You can see I substituted half the oil with water in the recipe to save on fat/calories. The crust makes the quiche on this recipe. It is super delicious!
