A fast, easy, and delicious favorite! It's also a great "fix ahead" meal. I store the cooked chicken in a container in the frig. When I'm ready to eat, I just have to heat the broth, place the spinach, dill, pepper and chicken in a bowl, pour the hot borth over them, and top with Parmesan. A fast, easy, and delicious favorite! Ingredients

5 C chicken broth
1 chicken breast, cut into strips
2 lemons
1 bag spinach
dill weed (fresh or dry)
pepper
Parmesan cheese, grated, 2 Tbsp
Directions
Bring broth to a boil in large saucepan. Squeeze in juice of two lemons and add grated rinds. Drop in chicken strips; remove from broth when cooked through.
Divide spinach into four bowls and sprinke with a little deill and pepper. Add 1/4 of the chicken strips and pour boiling broth over. Sprinkel 1/2 TBSP grated Parmesan on top of each bowl.
