6-8 cups diced potato
1 package of bacon, fried
1 raw onion, fried in the 2T canola oil
1 cup 1% milk
2 cup shredded cheddar cheese
salt and pepper to taste, recipe shows 1T salt and 2t pepper
Cube the potatoes -- about 6-8 cups when cubed.
Fry the bacon in a skillet.
If you are using pre-cooked bacon, you will need the canola oil.
When bacon is finished, fry the onion in 2T of bacon grease (or canola oil).
Cut potatoes into 1/2" cubes and cover with water in a 6 quart pan.
When potatoes are soft, take a potato masher and mash about 1/2 of the potatoes to thicken the water.
Take about a cup of the potato liquid and blend with the onions.
Return the blended onions and potatoes to the soup.
Add 1 cup milk to cream the soup.
Add salt and pepper to taste.
Cut the bacon in to pieces and add to soup.
Before serving, add almost all of the cheese to the soup.
Save the rest of the cheese to top the soup.
Serves 6-8 bowls of cheesy bacon potato soup goodness!
