Introduction

Number of Servings: 10

Ingredients

    1 Medium Cabbage, chopped in large chunks
    2 ears Sweet Corn- kernels cut off the cob (1 can may be used if fresh isn't available)
    3 small Yellow Summer Squash
    3 small Zucchini
    2 large Potatoes
    1 Onion, cut into quarters
    1 small can mushrooms (optional)
    2 whole Dried Japones Peppers
    4 Tbsp Unsalted Butter
    2 14oz cans Chicken Broth 99% Fat Free

Directions

Add first 7 ingredients to large stock pot.

In small skillet, saute pepper pods in butter. Strain butter to remove pepper seeds.

Add peppered butter to stock pot, along with 1 pepper pod (seeds removed unless you like it HOT)

Add chicken broth, and water to cover. Simmer until all veggies are tender.

Makes a large stock pot full, serving size depends on appetite, but I usually get about 10 meal size servings out of it.

This soup is a good jumping off point. it's easy to customize to your family's tastes, although I wouldn't recommend leaving out the cabbage unless you cut back to one can of broth because it is the bulk of the soup. I almost never use the mushrooms, but the friend who inspired this version LOVED them.

The chili peppers are the key really... but they are really hot. Be careful when using them, and yes, you really only do need 2 peppers. Unfortunately it is getting hard to find stores that still sell them in bulk bins, so I end up buying a bag of over a hundred for just 2 peppers. Thankfully they are cheap. If having difficulty finding them, check the Mexican section, or even better a Mexican specialty store.
