Cheesy Orange Roughy

Introduction

Orange Roughy with a little added flavor Orange Roughy with a little added flavor
Number of Servings: 4

Ingredients

    4 - Orange Roughy Fillets (can use other white fish in place of)
    2 Tbs Light (or fat free) Mayonnaise
    1 Cup Shredded Lowfat Cheddar or Colby Jack Cheese
    2 Tbs Shredded Parmesan Cheese
    2 Tsp Garlic Powder
    2 Tsp Paprika

Directions

Set Oven to Broil
Use Olive Oil on a papertowel to coat the broiler pan or cookie sheet to avoid the fish from sticking
Place fillets on pan, sprinkle each with the paprika
Broil 6 minutes, or until fish flakes

In a small bowl combine mayonnaise, parmeasan and cheddar cheeses, and garlic powder

Top the fish with the mixture and place back in the oven for an additional 2 minutes, or until the cheese mixture bubbles.

Serve and enjoy!
