First Place Southern Hamburger Pie

Ingredients

    1 pound extra lean ground beef
    1 medium onion, chopped
    1 tablespoon all-purpose flour
    1/2 teaspoon black pepper
    1 frozen ready-to-bake pie crust
    1 cup low fat cottage cheese
    ground paprika
    1 (4 ounces) can sliced mushrooms, drained
    4 ounces low fat cream cheese, cubed
    1/2 teaspoon ground cumin
    1/4 teaspoon salt
    1/4 cup Egg Beaters or 1 egg
    red pepper flakes, optional

Directions

Allow refrigerated pie crust to come to room temperature, according to package directions. Unroll and place in 9-inch pie plate.

Heat oven to 350 degrees. Combine meat and onion in a large skillet. Cook until meat is browned and onion is tender. Drain meat mixture in colander, pat dry with a paper towel, and wipe pan drippings from skillet with a paper towel.

Return meat mixture to skillet. Add mushrooms, red pepper flakes and cream cheese. Cook over low heat, stirring constantly, until cheese melts. Stir in flour, salt, pepper and cumin, blending well. Spoon meat mixture over pie crust.

Combine cottage cheese and egg beaters, mixing well. Spread evenly over meat mixture. Sprinkle mixture with paprika and additional red pepper flakes (optional).

Bake at 350 degrees for 35 to 40 minutes. Serves 6,
