Crockpot Lentils

Introduction

Lentils can be served over rice or with nice hot garlic bread on the side for a complete protein. Lentils can be served over rice or with nice hot garlic bread on the side for a complete protein.
Number of Servings: 12

Ingredients

    Lentils - 2 cups
    vegetable broth 4 cups
    onion - chopped 2 cups
    currants dried - 1/4 cup
    curry powder 2 tbsp (or to taste)

Directions

Wash and pick over lentils to remove stones. Place in crock pot with broth. Turn on high. Chop onion and add and stir in. Allow to cook on high for 8 to 10 hours. 1/2 hour before serving - stir in currants and curry powder. Serve hot. For a complete protein serve over brown rice or with nan or buttered bread or garlic bread on side.
