• ½ onion
• 1 small potato
• 3-4” leek, chopped
• 1 celery stalk, chopped
• 1 garlic clove, chopped
• 10 med zucchini, chopped
• 7 cups water
• McKay’s Chicken Seasoning, to taste
• Sea salt, to taste
2 Add the zucchini and 3 cups of water. Cover pot and cook just until tender. Add the remaining 4 cups of water, salt and mock chicken seasoning. Allow to cool a bit.
3 Blend in small batches and pour into your serving container.
