Akoho Sy Voanio (Madagascan Coconut Chicken Stew

Introduction

This is very quick and easy, and TASTY! Season to taste. I like garlic salt. This is very quick and easy, and TASTY! Season to taste. I like garlic salt.
Number of Servings: 21

Ingredients

    2 to 4 lbs of boneless, skinless chicken breast
    1 to 2 cans of coconut milk
    1 to 2 tomatoes
    2 tbsp. canola oil
    1 onion
    2-4 garlic cloves
    2 tsp. ginger

Directions

heat oil, garlic and onion for several minutes until slightly brown and tender
add chicken and cook until almost done (fully cooked)
add tomatoes
add ginger
stir in for a few minutes (not too long)
then add coconut milk
cook until a bit of a boil (watch this because coconut milk boils easily, and spills over quickly)
then remove from heat, or lower heat to lowest setting.

I serve this over brown rice or jasmine rice.

It's my favorite recipe ever!
