Sweet Lemon Rice

Introduction

A deliciously tangy blend of sweet figs, spicy ginger and tart lemon with broccoli, chickpeas and garlic sprinkled over brown rice. Yummy! A deliciously tangy blend of sweet figs, spicy ginger and tart lemon with broccoli, chickpeas and garlic sprinkled over brown rice. Yummy!

Ingredients

    1/3 cup of uncooked brown rice

    1 small red onion, finely chopped

    1 tbsp ground ginger

    5 spears of broccoli, roughly chopped

    1/3 cup of chickpeas

    1 large clove of garlic, finely chopped

    6 dried figs, roughly chopped

    Juice of half a small lemon.

Directions

Put the brown rice into a pot and cover with plenty of water. Bring to the boil and then let simmer for 30 - 40 minutes, until all water has evaporated or been absorbed and the rice is soft.

Chop the red onion up thinly and finely, then put In a wok or other frying pan. Sprinkle in 1 tbsp ground ginger and fry, striiring over a high heat until onions are soft.

Add roughly chopped broccoli and sir over slightyl lowered heat till the broccoli has changed colour and is a darker green colour.

Add the chickpeas.

Add the garlic and keep stirring so nothing sticks to the bottom of the pan and burns!

Add Figs.

Turn down the heat and add lemon juice, stirring.

When the rice is done, add it into the chickpea mixture and stir to get flavour right through.

Serves one.

Also delicious cold! Great for picnics, salads and lunchtime too.
