Cream of Potato Soup

Introduction

Great for cold weather. Avoid really high heat after adding milk and cheese mixture, otherwise you may burn the bottom which will affect the entire pot. You can also use fresh or dried herbs. Ingredients

    6c Chicken Broth (reduced sodium/reduced fat)
    2c Chopped onions
    4c Thinly sliced potatoes
    1/4c Chopped parsley
    2t Basil
    2t Dill weed
    1/2c Margarine
    1/2c All-purpose flour
    1t Salt
    Pepper to taste
    4c Milk
    2c Cubed 2% Velveeta (1lb)
    2c. Finely chopped ham

Directions

Combine chicken broth, onions, potatoes, carrots, parsley, basil, and dill weed in a large stock pot. Bring to a boil; reduce heat (don't cover). Simmer for 10-12 or until veggies are tender. Melt margarine in saucepan. Blend in flour salt and pepper. Add milk all at once. Cook until thickened, stirring constantly. Stir in chess until melted. Add to veggie mixture; stir well. Add ham. Cook until heated through and thickened some. Yield 12 servings.
