Quick Bean & Sausage Soup

Introduction

This is a great way to use up fresh tomatoes in the fall. A hearty soup that fills you up with good healthy ingredients. This is a great way to use up fresh tomatoes in the fall. A hearty soup that fills you up with good healthy ingredients.

Ingredients

    8 Breakfast Sausages
    1 cup chopped onions
    1 clove garlic, chopped
    9 medium whole tomatos, ends removed
    2 cans (398 ml) Beans (I used Maple flavoured)
    0.5 tsp Dry Mustard
    0.5 tsp Salt
    3 Tbsp Brown sugar, not packed

Directions

Cut the Sausage links in half length-wise, and then into small chunks. Place into a non-stick pan to cook. Add onions, and cook until sausage is done. While waiting, place half the tomatoes and one can of beans into the blender. Blend, and pour into cooked sausage mixture. Do the same with remaining tomatoes and beans. Add sugar, salt, and dry mustard, and bring to a boil. Simmer for 30 minutes on low. Enjoy!
