Chris' Lemon Chicken

Ingredients

    4 skinless chicken breasts halves
    3 tbl flour
    2 tbl butter
    2 tbl olive oil
    1 3/4 cup chicken broth
    1/4 cup fresh lemon juice
    salt & pepper to taste

Directions

Pound chicken breasts with mallet to a thickness of about 1/2 inch. Dredge flattened breasts in flour (reserve excess flour).

In a large saute pan melt butter with olive oil over medium heat until it sizzles. Add breasts cooking 4-5 minutes on each side (until juice runs clear). Remove chicken from pan and stire reserved flour into pan w/ left over butter/oil residue.

Whisk in broth and lemon juice; heating to boiling. Boil for 1 minute or so until slightly thickened.

Return chicken to pan to heat it thru, season to taste.. Serve chicken w/ saue ladled on top.

Great with basmati or any other flavorful rice.
