IntroductionAdapted from Veganomicon. I cut the chili powder from 3 T to 1 T, omited the 1 T mustard, and substituted 2 T brown sugar for 3 T maple syrup. Adapted from Veganomicon. I cut the chili powder from 3 T to 1 T, omited the 1 T mustard, and substituted 2 T brown sugar for 3 T maple syrup.
1 cup uncooked lentils, (brown)
4 cups water
1 T olive oil
1 green pepper, diced small
2 cloves garlic, minced
1 T chili powder
2 tsp. dried oregano
1 tsp salt
8 oz can tomato sauce
1/4 cup tomato paste
2 T brown sugar
2 T apple cider vinegar
About 10 minutes before lentils are done, preheat olive oil in a soup pot over medium heat. Sauté the onion and green pepper for about 7 minutes, until softened. Add garlic and sauté another minute.
Add the cooked lentils, chili powder, oregano, brown sugar, and salt. Stir. Add the tomato sauce and tomato paste. Cook for about 10 minutes.
Turn off heat and let sit about 10 minutes so the flavors can meld. Serve over a whole grain bun.
