Ingredients

    Turkey Italian Sausage - 16oz.
    Crushed tomatoes - 28oz
    Garlic - 2 cloves
    Mozzarella, part skim - 16 oz
    Ricotta cheese, whole milk (can use part or skim) - 16oz
    Onions, raw, chopped, 1/2 an onion
    Basil - 1/2 cup
    Spinach, frozen, 1 package - 10oz
    Parmesan cheese - 1/4 cup
    1 large egg
    Whole wheat lasagna noodles, 1 package - 13.5oz
    Olive Oil 1 1/2 tsp
    Pinch of oregano
    Pinch of kosher salt
    Pinch of black pepper
    Hot water - 1 cup

Directions

Put olive oil into pan. Add onion and garlic and sweat until clear. Add basil and saute until wilted and add crush tomatoes and salt and pepper. Let simmer.

Take turkey sausage and take the skin off. Brown sausage and drain. Add to tomato sauce (sauce can be made day before).

Take spinach thawed and drained and mix with ricotta and egg and add salt and pepper to taste.

Take a 9x13 pan and ladle the tomato sauce on the bottom, next take 3 uncooked noodles side by side on top of the sauce, add some of the spinach ricotta mixture on top of the noodles, then place some shredded mozzarella on the spinach ricotta mixture. Repeat this two more times until you have three layers and top with Parmesan cheese and pour a cup of water around the edges. Cover tightly with foil and place into oven at 350F for 75 minutes. After it comes out, top with the rest of the Parmesan and mozzarella and place back in uncovered for 10 minutes to brown. Cool for 10 minutes and cut into 8 pieces (can be made into smaller pieces).
