Karen's Quick Lentil Soup (1 cup serving size)

Introduction

A delicious and quick meal for lunch or dinner. Freezes great! A delicious and quick meal for lunch or dinner. Freezes great!
Number of Servings: 8

Ingredients

    2 TBSP. Olive Oil
    8 Cups Water
    4 packets of Ham Boullion (Try Goya Jamon Boullion)
    1 TBSP Black Pepper
    1 TSP Cayanne Pepper
    1 Med. Onion, diced
    2 Cloves Garlic, minced
    1/2 C. Carrots, diced
    1 C. Celery, diced
    2 C. Lentils (try mixing green with yellow and orange)

Directions

(Makes 8, 1 cup servings)
In pot, add olive oil and heat on medium. Mix in onion, garlic, carrots and celery and pan saute for 1-2 minutes. Add black and cayanne pepper and mix. Pour in water and ham boullion. Next add lentils. Bring to boil and then reduce heat to simmer for 20 minutes. Soup is finished when vegetables are firm but tender.
