Apple Muffins

Introduction

The original recipe came from thenest.com, but I modified it a bit and came up with these. I have a feeling they'd be good with some orange zest in them, and maybe some more cinnamon (but I LOVE cinnamon!) Number of Servings: 12

Ingredients

    Muffins
    1 1/2 cups flour
    1/2 t cinnamon
    1/4 t nutmeg
    1 t baking soda
    1/4 cup vegetable oil
    1/4 cup unsweetened applesauce
    3/4 cup Splenda (the kind that measures the same as sugar)
    1 t vanilla
    1 egg
    2 egg whites
    2 cups grated apples
    Topping
    2 T cold butter
    1/2 T granulated sugar
    1/4 cup flour

Directions

In a small bowl, whisk together the dry ingredients. In a large bowl, stir the wet ingredients together until well mixed. Stir in the dry ingredients until just blended. Fold in the apples. Spoon into silicon muffin cups. Cut together the topping ingredients until crumbly, sprinkle on top of the batter. Bake at 350 for 25-30 minutes, until a toothpick comes out clean.

Makes 12 muffins
