Healthier Oatmeal Cookies

A family favorite but left out the egg yolks and cut the sugar and shortening in half. Cookie is now more moist than chewy but still pretty darn good. Ingredients

1/2 Cup Shortening (not butter or margarine)
1/2 Cup White Sugar
1/2 Cup Brown Sugar, packed
4 Egg Whites, beaten
1/4 Cup Water
1 Tsp Pure Vanilla
1/2 Cup Whole Wheat Flour
1 Cup Unbleached Flour
1 Tsp Salt
1 Tsp Baking Soda
3 Cups Old Fashioned Oats
Directions
Sift together all dry ingredients and set aside.
Blend together shortening and sugars then add eggs and mix well. Stir in water and vanilla. Add sifted dry ingredients, combining all ingredients well. Stir in oats.
Drop by teaspoonsful onto baking sheet. I like to line my cookie sheets with parchment paper.
Bake at 375 for approximately 13 minutes.
Makes about 54 cookies or 4 and 1/2 dozen.
