Ingredients

    Red Potato, 200 grams (2 medium sized)
    Scrambled Egg, 1 large
    *Havarti Light Cheese 2 slices
    Garlic powder, .25 tsp
    Pepper, black, 1 dash
    *Lawry's Season Salt, 0.25 tsp
    Parsley, dried, .25 tsp
    *Hormel Bacon Bits, 1 tbsp

Directions

for ease in preparation, first preboil your potatoes, skins on, for about 20 minutes. (this can be done the night before). once cool enough to handle, cube the potatoes. heat a dash of cooking spray in a nonstick skillet, add potatoes and seasonings and saute until browned crisp as you like. scoot potatoes to the side, scramble the egg and pour into empty space, cooking gently 1-2 minutes. combine egg and potato into center of pan, sprinkle with bacon bits, and top with cheese slices. remove from heat and let set until cheese melts (about 2 -3 minutes) serve. makes 2 servings.
