Artichoke/Rotini salad with ChickenSubmitted by: BUTTERFLYSOON2B
Dreamfeilds Rotini - 4 oz dry (about 1.5 cups)
Artichoke hearts (14 oz can), reserve 1/4 cup liquid.
Lemon juice, 0.25 cup
Basil, 2 tbsp
Garlic, 2 cloves
Crushed Red Pepper Flakes, 0.25 tsp
Chicken breast, cooked, skinless, diced - approx 12 oz. canned/jar Roasted Red peppers (apxy 4 oz or the equivalent of 1 pepper).
Salt, 0.25 tsp
Extra Virgin Olive Oil, 2 TBSP
In a food processor or blender process half the artichokes hearts, the reserved artichoke liquid, lemon juice, basil, garlic, roasted red pepper and crushed red pepper flakes until smooth.
Coarsely chop the remaining artichokes. In a med bowl, combine artichokes and chicken. Add cooked pasta and mix. Pour the dressing over the mixture, add the olive oil and salt and stir gently to completely mix. Serve immediately for best flavor.
This makes 4 servings of approx 1 cup each.
