Introduction

Number of Servings: 20

Ingredients

    1 (46 ounce) can tomato juice
    1 (8 ounce) can tomato paste
    1 package shredded cabbage (5, 11/2 c. servings)
    2 cups zucchini, sliced thick
    2 cups onion, chopped
    6 garlic cloves, sliced
    2 cups broccoli, chopped
    1/2 head cauliflower, chopped
    15 medium mushrooms, cut in 1/4
    3 carrots, peeled and sliced thick

Directions

Place all ingredients in stockpot, bring to a boil Reduce heat to low and simmer until all veggies are tender.

Makes 20 1-cup servings
