Tempeh Chickenless Salad

Introduction

This could be served on a plate of greens or on whole wheat bread. Great source of protein just after your workout! You can easily make this vegan by using vegan mayonnaise. Ingredients

    1 package of Flax Tempeh
    1/4 cup of low fat mayonnaise
    2 stalks of celery
    1/2 cup of shredded carrots
    1/4 cup of raisins
    1/4 cup of walnuts
    2 tsp of yellow mustard
    garlic, salt, and pepper to taste

Directions

Cut tempeh into small squares and then steam them for about 20 minutes or until tender. Let tempeh cool. Add all ingredients and mix gently. Store in refrigerator for an hour or more before serving on bread, wraps, or plates of greens.
